Have you ever tasted soft-shell crab vermicelli or truffle wagyu beef cheek polo buns? If your answer is no, Carousel’s special SG60 Celebration buffet is something you need to experience. From July 4 to August 10, 2025, Carousel invites everyone to join in celebrating Singapore’s 60th anniversary through an unforgettable culinary journey.

Celebrating Our Hawker Heritage

Carousel’s tribute to Singapore’s food heritage features over 30 exciting new buffet dishes, including seven special dishes crafted in collaboration with some of Singapore’s most cherished food brands. Each dish tells a story, blending nostalgic flavours with innovative culinary twists.

Must-Try Highlights at Carousel Buffet

Carousel’s chefs have outdone themselves with these unique co-creations. Here’s what you shouldn’t miss:

45-degree Truffle Poached Eggs and Black Pepper Crab Toast

Imagine silky, smooth eggs infused with truffle, gently layered with peppery crab meat between golden toast slices. Created with heritage coffee brand Kim Guan Guan, this luxurious dish perfectly complements their aromatic kopi or fragrant teas. Breakfast will never be the same again.

Stacked sandwich slices, yellow sauce, red chilies, and parsley on stone—ideal for fans of Singaporean cuisine.

Singapore Truffle Wagyu Beef Cheek Polo Bun

Two red, star-topped buns—one cut open to reveal a savory filling—sit on a plate amid lush green leaves, evoking Singapore.

Inspired by Golden Pillow 933’s beloved curry-in-a-bun, this mouthwatering creation by Chefs Hua Kai and Saifullah introduces tender wagyu beef cheek wrapped inside a soft, fragrant polo bun. Every bite combines East and West, tradition and modernity, making it truly unforgettable.

Soft-shell Crab Imperial XO Dried Scallop Vermicelli

Someone holds a plate of fried crab with dipping sauce next to stir-fried noodles, classic Singaporean dishes outdoors.

Chef Kok Wai transforms the humble bee hoon into a gourmet sensation, frying it with umami-rich XO sauce, dried scallops, and crispy soft-shell crab. Created in collaboration with heritage snack brand Cita Rasa, its comfort food has been elevated to another level.

Salmon Rillettes with Tobiko in Crispy Youtiao & Roti “Youtiao” John

Cooked tempeh garnished with parsley and chili on a blue plate, set on a green leaf—fresh delight at Carousel buffet.

Chef Chin Siong’s imaginative twist on classic youtiao offers two mouthwatering options. The first is stuffed with creamy salmon rillettes and vibrant tobiko. The second, inspired by the beloved roti John, features Japanese minced chicken and eggs wrapped in crispy dough. Both creations beautifully capture the essence of local hawker delights.

Chilli Crab Popiah

A white plate with a vegetable wrap and side lettuce sits on stone, framed by green leaves—a taste of fresh Singaporean fare.

A clever reinterpretation of a Singaporean favourite, Chef Saiful’s popiah, filled with chilli crab, crispy beans, and refreshing cucumber, pays homage to shared family feasts and our beloved hawker culture, created in collaboration with Mr Popiah.
