Sanpoutei Ramen has become a beloved name in Singapore’s dining scene, and it is known for its dedication to authentic Japanese ramen. But what makes this brand so special, and why are they celebrating such a significant milestone with a new store opening? Let’s dive into everything you need about Sanpoutei Ramen, their 10th anniversary celebration, and the exciting new Paragon outlet.

A Legacy Rooted in Niigata: The History of Sanpoutei

Sanpoutei Ramen: Sliced pork, soft-boiled egg, nori, spinach & red onion served in Paragon Shopping Centre.

Founded in 1967 in Niigata, Japan—a region renowned for its high-quality rice and, you guessed it, delicious ramen—Sanpoutei has spent over five decades perfecting the art of noodle soup. Niigata’s climate is ideal for cultivating the perfect wheat for its noodles, contributing to that signature texture and flavour. The brand’s commitment isn’t just about following a recipe but preserving traditions passed down through generations.

Sanpoutei Ramen with soft-boiled eggs, pork, bamboo shoots, and broth offers a classic Singapore Tsukemen experience.

Sanpoutei Ramen arrived on Singaporean shores in 2014, promising genuine Niigata-style ramen. Unlike some establishments that compromise authenticity for broader appeal, Sanpoutei has remained steadfastly true to its roots. This dedication to quality and tradition has cultivated a loyal following over the past decade.

The Paragon Outlet: A Modern Ode to Japanese Craftsmanship

The new outlet at Paragon Shopping Centre isn’t just another store; it’s an experience. Spanning 1,130 square feet with 46 seats, the design is a deliberate and thoughtful homage to Japanese culture. Imagine soft lighting, minimalist décor, and subtle nods to iconic imagery like Mt. Fuji – all working together to create a relaxed and inviting atmosphere. The spatial design aims to recreate the feeling of those cosy back-alley ramen shops in Japan, fostering connection and conversation.

Paragon Exclusive: Kombu-Infused Tsukemen – A Culinary Masterpiece

Singapore Ramen with seaweed, soft-boiled egg, lemon, and garnish, served with diced onions in broth at Paragon mall.

The show’s star at the Paragon outlet is undoubtedly the Kombu-Infused Tsukemen ($18). This isn’t your average dipping noodle dish; it’s a carefully orchestrated culinary journey. Here’s how it works:

  • Chilled Noodles: Silky noodles are gently steeped in a kelp bath, infused with Rishiri and Gagome Kombu from Hokkaido, prized for their umami richness.
  • Tare Dip: Each noodle is dipped into Sanpoutei’s house-crafted soy-based tare, mellowed by the kelp.
  • Wari Soup Finale: A warm broth of Kombu and Bonito (Wari Soup) is poured in, transforming the dipping sauce into a soothing, flavourful endnote.

This three-step process encourages mindful eating – slowing down to savour each bite and appreciate the craftsmanship.

For the Traditionalists: Shoyu Ramen – A Timeless Classic

At Sanpoutei Ramen, a steaming bowl of Singapore Ramen with pork, egg, spinach & seaweed sits on a dark wood table.

While the Kombu Tsukemen represents innovation, Sanpoutei’s Shoyu Ramen (from $15) is a respectful bow to tradition. Available across all outlets, the Paragon version takes this classic to another level with an exclusive blend of Dried Flying Fish (Ago) and Rishiri Kombu, slow-simmered for over seven hours. This process extracts maximum flavour, producing a clear and intensely umami-rich broth. Expect tender noodles, familiar toppings like Chashu pork belly, spinach, bamboo shoots, nori seaweed, and a perfectly marinated Ajitsuke Tamago (soft-boiled egg).

Beyond the Bowl: The Sanpoutei Philosophy

Sanpoutei Ramen isn’t just about serving delicious food; it’s about creating an experience. Director Kaneko Hironobu emphasises the restaurant’s commitment to “dedication to craft, reverence for tradition, and the joy of bringing people together.” This philosophy shines through in every detail—from the carefully sourced ingredients to the thoughtfully designed space.
